Arborio rice is a special variety of rice with slightly rounded grains, perfect for a risotto, a traditional Italian dish served in the northern regions of the country.
Due to its wide, round grains, it ideally blends with numerous spices and absorbs their flavour. Properly cooked, it remains al dente inside while the outer layer melts in the mouth.
The basic version of risotto includes arborio rice, stir-fried on olive oil and simmered in a broth with a touch of white wine, depending on your choice. To get a creamy texture and silky flavour from the rice, add the liquid slowly, and stir frequently.
Make sure you do not rinse Arborio rice before cooking, because that removes the starch that creates the typical, thick risotto sauce.
